We present an easy interpretation of a beverage featured on our latest menu. This is a batch prepared mix that's packed with the flavours associated with festive period, which makes it excellent for a celebration. Any leftover cordial for morning drinks, desserts, or to mix additional servings of this cocktail.

Ingredients for the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Instructions
For the Cordial: Put the listed items into a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Next, take off the heat and leave to cool down entirely. Pour into an sterilised bottle, seal and refrigerate it in the fridge, where it will keep for up to four weeks.
Preparing the Cocktail Base: Pour all the liquid ingredients in a large bottle, allow it to infuse for 60 minutes, then pass it through best through muslin, making it perfectly clear.
For serving: Add 85ml of the batch mix to a cocktail shaker packed with ice, and agitate lightly for a minute to chill. Pour into an chilled martini glass or similar, decorate with the cranberries and finish using a brief mist with the mandarin essence over the drink.
